Ice Cream Sandwiches

There is always a reason to celebrate! We like to celebrate the little things. It can be as simple as getting through the first week of school, standing up to a bully, getting a “B” on a test, or learning to ride a bike. 

I love making these homemade ice cream sandwiches to celebrate our little achievements. They are easy and the perfect size for a little treat.

Gather the ingredients and assemble…

Gather:

  • 1 package of Goya Chocolate Maria Cookies
  • 1 carton of your favorite flavor of ice cream
  • sprinkles
  • parchment paper cut into large squares

And assemble:

  1. Before you begin assembling, cut the parchment paper. If you are making 10 ice cream sandwiches, cut 10 squares, etc…
  2. Pour your sprinkles into a bowl.
  3. Scoop the ice cream onto one cookie.
  4. Place the other cookie on top. 
  5. Dip the edges into the bowl of sprinkles.
  6. Wrap each ice cream sandwich in the parchment paper and place them all in a storage bag. Store in the freezer until you are ready to celebrate.
  7. Enjoy!
